Recipe of the Week (April 10-16, 2011): Pesto Turkey Meatloaf

Boredom does things to a woman. Once it sets in, all sorts of mayhem can ensure. Take, for instance, this recipe. It was borne of sheer boredom. Too many ingredients, too much time, not enough to do = Pesto Turkey Meatloaf. Surprisingly, it turned out pretty good. So well, in fact, that it made its way into my former company's recipe book and has since received rave reviews. Okay, maybe not rave reviews, but positive feedback for sure!

1 1/2 lb. ground turkey
1 c. seasoned bread crumbs
3 tbsp. pesto sauce
2 tbsp. tomato sauce
1 pkg. dry onion soup mix
1/4 c. onions, diced
1/4 c. green peppers, diced
1 can diced tomatoes with green chilies
2 tbsp. milk
Tomato paste for topping

Preheat oven to 350°. Combine all ingredients except tomato paste in a bowl; mix well but don't overmix. Shape into a loaf  and place in pan. Bake for approximiately 1 hour. Remove from oven. Top with tomato pste and return to oven for an additional 5-1- minutes.
