Recipe of the Week (March 27- April 2, 2011): Merry Cheese Cakes

My mom was an excellent cook. I say 'was' because she is no longer with us, may she rest in peace. However, even though she is no longer here, the spirit of her cooking lives on.

This week. I want to share one of her favorite dessert recipes, which actually was printed on the backside of a Land 'o Lakes butter package. My sisers and I have been making this delicious dessert for over 20 years, so it is a recipe that has stood the test of time in my family.

Merry Cheese Cakes

CRUST & TOPPING

1 cup all-purpose flour
1/3 cup sweet butter, softened
1/2 cup firmly packed brown sugar
1/2 cup chopped nuts

FILLING:

8 oz. pkg cream cheese, softened
1/4 cup sugar
1 egg
2 tsp. each milk and lemon juice
1/2 tsp. vanilla

Preheat oven to 350°. In a bowl combine flour, butter and brown sugar. Blend with mixer at low speed for 2-3 minutes until fine. Stir in nuts. Reserve 1 cup of mixture for topping; pat remainder in ungreased 8” sq pan. Bake near center of oven for 8-10 minutes or until lightly browned.

Prepare filling by blending filling ingredients until smooth. Spread filling over partially baked crust. Sprinkle with reserved crumb mixture. Return to oven for 23-30 minutes or until golden brown. Cool; cut into bars. Store in refrigerator.

  2. Thank you Sandra. They really ARE delicious! I wish I had a photo to go with them. Perhaps I'll have to whip up a batch just so I can take a pic. They're so addicting.

  3. Thank you for the recipe. I've got the picture from a long ago magazine that didn't include this recipe (there were two desserts in the picture. Now I have the recipe to go along with the picture.
